To produce excellent food product for Resort guests. Leads and assist in the production of banquet and restaurant food product. This position pays $20.00/hour Responsibilities

• Maintain good morale in the work environment
• Performs the actual cooking of all menu items, normally to order in accordance with the procedures and high level of quality.
• Prepares food in an efficient manner while adhering to established standardized recipes and procedures
• Cook 1 is responsible to finish all task on his or her shift
• Responsible for sautéing, charbroiling, baking, roasting and braising.
• Pre-function prep of meats to include: Searing, marking, marinating, and basic roasting.
• Communicate with Culinary Management to coordination daily prep list.
• Responsible for labeling, dating, and rotating all food products and ensuring freshness.
• Perform work assignments to meet proper quantities within His or her shift with his or her team
• Be knowledgeable of all stations in the restaurant & Banquets
• Be knowledgeable of plate presentations and preparations of all menu items.
• Communicate with all line cooks daily for proper pars and production requirements when needed in specified workstations.
• Responsible for maintaining prep and production pars.
• Responsible for keeping waste to a minimum
• Responsible for maintaining a clean and sanitary work environment
• Any and all reasonable requests of management

Qualifications:

• 3+ years of accelerating experience in all food production
• Expertise in all kitchen stations
• Graduate of a culinary school of program preferred
• Must possess a valid Food Handler's certification
• Able to work varied shifts, including nights & weekends
• Must have knowledge and understanding of the five mother sauces: Hollandaise, Vuloute, Espanola, Tomato, Bechamel
• Understanding of emulsions Vinaigrettes, Mayo, Aolis, Purees, and dressings
• Intermediate knowledge of all proteins
• Intermediate knowledge of all herbs and spices
• Intermediate knowledge of fine dining production and a la carte service
• Excellent knife Skills
• Team oriented
• Ability to take & follow instruction
• Customer service
• Ability to self motivate and manage time & activity
